LGR just recently used an IBM/AT with EGA Monitor. Great Image quality!! My TowerAT has a built-in Gemini-VC1 (Hercules/CGA/EGA) is possible. EGA with 256K up to 800x600@16colors! I LOVE Matrox-Cards, but for a P3/800 with perhaps a Voodoo, you need some PS in Hardware, so no good advice for a matrox in that area.
