You can use dgVoodoo 2 and force any resolution that you want. The game will be scaled to that resolution (for example, your desktop resolution). Maybe they are from some kind of Unix. They used combinations of tar/cpio/dd to write on them. If the host was windows, I'd try to use ntbackup, Symantec/Veritas/Norton backup (don't know under what designation was sold at '97)... maybe HP Data Protector...

There are lots of interesting Japanese and Korean games. Besides that, Planescape Torment and those "talk like a pirate" games. Those old wordings and expressions, and the "pirate talk" may be easy to understand if you mother language is English... but is painful for me.

Did you install those games with wine or did you only copied those directories? Keep in mind that most windows programs copy files into Windows and/or profile directories. Even in case you copied everything right, you'll be missing those registry entries.

Hitachi has a tool that can change some settings (I've seen some documents that states it can change UDMA modes, but not set to PIO). Also, hdparm may help you (but also destroy your hard disk/data). Hiren's boot CD have lots of HDD tools, maybe one of those tools from Seagate or WD can help you.

Try using a normal Voodoo patch instead of Voodoo Rush. Also, remember that later Voodoo 3 (and maybe your Banshee card) drivers only run under Windows DOS command.
