Thanks for the suggestions so far! I was thinking of putting an AT board in an ATX case but I don't have any of the back plating needed (the aluminium strip with just a single hole for the keyboard). Since I have plenty AT cases that's not an issue right now anyway.

No, the mainboards are AT but they have both the older AT and an ATX connector. I've been using 2.88 meg floppies to transfer data across. Ofcourse it's only double that of normal floppy drives and it's not easy getting enough parts for just an extra 1.5 meg transfer space.
