My advice is to go for exactly what you always wanted before the prices go insane, you will have to keep in mind that some of even the best parts from this era might not be in the best condition anymore so replacing caps ect is a must. There is a way of being able to use some of the reserved memory provided you are using a color monitor as one of my old instructors was doing this for business clients back in the era that were using the machines for cad.

IBM used distilled water in their liquid cooling back in the mainframe days, I hope that OP doesn't scrap that system. Rather see it traded or sold to someone who wants a period correct system like this.
