All S3 cards have "fixed" screen refresh rates for VESA video modes with resolutions lower than 640x480. The best you could do is to load UniVBE 6.7 (which supports the vanilla Trio3D without any patches or hacks) in DOS then use UniRefresh or VBEHz to set the refresh rate for 320x240.

As Tiido mentioned, DOS games have their own MIDI implementations for the OPL2/3 FM synth while Windows uses a generic one that it may not be ideal for everything. Try adding SET FX_GLIDE_SWAPINTERVAL=2 environment variable to see if it does the trick. What will do is that the screen will be swapped every two vsyncs, meaning that the framerate will be capped to the half of the screen refresh rate (30 FPS if it is 60 Hz).

In DOS, compatibility for GeForce3 and GeForce4 cards are nearly the same except whether the VBIOS includes the EGA 8x14 font or not. The only real problem that I can think of is that there are many variants with larger VIBIOS (up to 64 KB), giving you less space for UMB and/or the EMS page block.
