If you want to run OS X you should use PearPC, but it's not very good (it doesn't support some hardware). It was a promising emulator, but it was nearly abandoned when OS X was ported to Intel and it was possible to run it on a normal PC.
If you want to run OS 9 with a G3 processor, Sheepsaver can do the trick.

Quemu is supposedly not bad these days in emulating a ppc for OSX 10.1-10.4
I prefer PearPC for OSX. It can run up to 10.4.11. One thing it can not do is Classic mode. Even after installing the 9 system folder, it hangs when trying to start Classic mode.
Classic mode on a PPC chip isn't a very good solution for gaming in my experience. I had pretty poor results with a pretty predictable stutter running Sim City 3000 on a real Mac mini. Honestly when it comes to Macs if were talking games I don't see the interest in running anything OSX related, the unique mac games are mostly earlier anyways.
The Ultima 3 port is great though 😉

Could be good for some later games like Quake IV for the G5
Is there something different about the Mac version of Quake IV?
