Is it possible to configure glidos for grand prix 2?

I don't know. Is it a DOS based game using Glide graphics? I can't see any sign that it is.

DOS, but there is no glide API in this game.
So, the short answer is - no. The long answer is uncensored...

It did not, it did had a proprietary game engine which performed software rendering of 3D, which could be displayed by most VESA-compatible SVGA (2D) adapters.
