If you're looking for a DOSBox frontend, an interface that allows you to run games without having to type any instructions, there are several available. These three are my favourite:

D.B.G.L. (JAVA based, available for many platforms)

D-Fend Reloaded. (Windows only, but very good)

GR-lida. (also supports ScummVM and VDMS).

They all work more or less the same way, you create a profile per game, clicking on the options you want and seting-up folders to mount and other stuff. Once done, you can run that game with a double click.

Also, some CVS builds of DOSBox, such as Ykhwong's have menus, which allow you to do stuff on the run, without needing to configure anything.
