if the joystick works in Windows (areyou using windows?) then it *should* work in Dosbox if joystick is enabled (that's by default) in Dosbox.
Of course the games need to support a joystick as well.
FYI: I've got a similar setup to yours (a PS2 gamepad through a USB adapter) and it works perfectly.
They usually emulate standard usb joysticks so you shouldn't even need drivers

i use an adapter from ems to connect 2 ps2-pads to my linux box. works perfectly without special drivers.
the only problem is, that both gamepads are recognized as one large gamepad with lots of buttons and axes, but that's no problem if a program let's you configure the input devices.
Unfortunately, you still can't assign joystick axis movements to the keymapper, this is a long standing bug in DosBox. Joystick buttons work as keymapper assignments, though - at least that's been fixed.
