My screenshots come out 340x 200. If possible I want to up this to a bigger size.

I have searched on here and looked in the config files and some guide but I must be missing something. What config do I need to change?

Yeah, the screenshots produced by DOSBox are of the base image, prior to any stretching, filters, or shaders being applied. You'll need to run them through some image software to resize them. If you want to preserve the filter effects there are tools to apply them to standard images, 2dimagefilter, and possibly a few others.

Maybe not as flexible as you need, but the machine=vgaonly setting will double the capture resolution of lower-resolution video modes. For example you will get a captured 640x400 image from a 320x200 resolution.
