Very simple... all you have to do is extract your favorite DOS shell/menu onto your mounted directory. Run the install within DosBox. After the install is done, you'll have to make the shell/menu to autostart everytime you run dosbox.

Ex.
[autoexec]
# Lines in this section will be run at startup.
mount c c:\progra~1\abandonware
c:
cd xx
xx
