I'm guessing it's done the same was as it is on a real dos box. But don't know.

Yes, DOSBox emulates the ANSI.SYS driver, and you can change console text color with escape codes just like real DOS. You can also use the 4DOS shell in DOSBox, which provides a COLOR command to change text color, but it doesn't "stick" as well as the escape codes.
