As the Guide-Section doesn't allow new threads, I'll post this here.
This is a 14 minute video guide to set up X-COM Apocalypse to run near perfect on the latest DOSBox version:

Pastebin with all the DOSBox settings: https://pastebin.com/yBwwPmis
Resolutions up to 5k covered.
I recommend using the original CD.
However, if you only own the GOG/Steam version, this guide will work as well.
On GOG though you gotta convert the .bin/.cue into an .iso first:
Locate the .bin/.cue files in the install directory:
...X-COM Apocalypse\CD\
Use a programme such as "WinBin2Iso" to convert the .bin/.cue into an .iso.
That .iso can now be mounted by Windows 10 by simply double-clicking it.
The Steam version already has a "cd.iso" which you can mount on Windows 10.
