Attached is an archive with a batch file for showing a console menu in DOSBox. This example menu can be further adapted for starting other games and specifying emulator options. It also has an example for running STRINGS.COM (DOS command line utility to ask for user input). This utility may be tested in official DOSBox or else any lines that refer to STRINGS.COM may be commented out in the batch file. The archived README has a link to the utility file. The menu is meant for development only.
