I have successfully installed 7th Guest on my Windows XP using DOSBOX. I am using the beta thing to have it running. Runs quite well I might say.

One thing that frustrates me and makes the game unplayable: is there a way to adjust the sound?

The music is too loud and the talking is too low, thus I can't hear what to do in the puzzles.

I remember having a similar issue way back when on a real system. For me the problem occurred with a Sound Blaster Pro (original opl2 version) installed and selected for digital sound effects. The work around was to select just Sound Blaster for sound effects in the 7th Guest setup. I never found if there was a mixer setting or anything that could be adjusted to fix Sound Blaster Pro mode. (also don't know if this is the same issue you're experiencing in emulation, but could be worth a try if you're using the Sound Blaster Pro for digital sounds...)
