According to manual specifications, I have ESS688 Sound card.
Some games recognize it when I put

SET BLASTER=A220 D1 I5 T4

But some don't, some players freezes.
I found ESS688 in driver's section:
http://www.vogonsdrivers.com/getfile.php?fileid=112

But when I run ESSCFG.EXE, it shows me

Unable to find AudioDrive ES1868-Based chip

How to set-up music completely with midi on that caomputer?
I'm in DOS 7.1

You're running the wrong driver. That package has drivers for a bunch of different ESS chips, and you ran the ES1868 driver.

The 440CDT doesn't use an ESS sound chip at all (the older 400-430 series Satellites used the ESS688), it uses a Yamaha OPL3-SAx. You can download the right sound driver here:

The DOS drivers are bundled with the Windows drivers. When you install them, they also install the DOS drivers and configure them.
Weird thing that some games do work with that card with just the BLASTER line, though. YMF-71x/OPL3-SAX is PnP, so unless the BIOS has some PnP support I can't see how this would happen.
