I seem to recall seeing a webpage somewhere that listed, with photos, variants of the Voodoo 3 3000.

I'm not talking about the V3 2000 or V3 3500 (retail or Compaq) -- only the V3 3000.

I've noticed that some have S-Video out, or a heatsink with screws, while others have one or neither. I'm also interested in the different kinds of memory used. I'll try to include some photos a little later.

They are all mixed up here but it's probably the best place to start because he gives both the common name and the part number and it's pretty complete.

There are also PowerColor Voodoo3 3000 and 3500 http://www.thedodgegarage.com/3dfx/overseas.htm These are not as common as regular 3dfx/STB built V3.
Other brands using different PCb design also exist, but it is almost impossible to get them.
