I dont have one, but have been reading about it aswell. I had an AST 486 server once (big dark grey tower), but dont remember its model name. I think it was EISA and had a CPU card. Think it maybe could take another card, but i ripped out the motherboard and converted the case it so it could take a standard AT motherboard. Tossed it not many years ago and now i regret it 😵
What i kept was a Compaq Proliant 4500 quad capable rack server. Have a Proliant 4000 motherboard and 3 out of 4 486dx50 CPU cards so i can convert the 4500 to a quad 486 someday if i can get the last CPU card.

What kind of software was running on such systems?

Compaq Proliant 4000 came in 1993 and Microsoft also launched Windows NT 3.1 that year so that would be one option, but also some flavours of NIX such as SCOunix were x86 SMP capable.

There were other 486 SMP "Superservers" out there like:
Olivetti, LSX 5040E, 4x DX2-66
Tricord Systems, Powerframe ES3000, 4x DX2-66
Netframe Systems, NF250, 5x DX50
Wyse Technology, Series 7000i Model 760MP, 5x DX2-66
Tricord Systems, Powerframe ES4000/5000, 6x DX2-66
Sanyo Icon, LANser MMX400, 8x DX4-100 (?)
Netframe Systems, NF450, 9x DX50
Unitek Technology, UT-Server/SMP, 10x DX4-90
Plexcom, Quantumserver 6000, 14x DX4-100

The last one really takes the cake! 14x 486 DX4-100... 😲
