The WD1003V is a 16 bit ISA card, but would it also work in an 8-bit ISA slot (i.e. an XT or classic PC system) or is it exclusively intended for AT systems/16 bit ISA?

I would say, no. Not possible. Get an 8-bit controller.

Quick answer: No. The manuals state AT or AT compatible. It has no jumpers for IRQ, DMA, BUS width or Port addresses so you cannot set it to 8bit mode by using only the 8bit IRQ, DMA, Port, etc. AFAIK. Here are links to the manuals in case you do not have them:

Thanks a lot. It's quite interesting that a multi-IO board with an IDE port, is more backwards-compliant (vintage-compliant) than a freaking MFM controller.

The IDE port would not work in an 8bit ISA slot. The other ports might or might not.
