No matter what computer I try it in I don't see the option to go and configure the drives. This is driving me nuts! I can see and set up the drives in windows but I cant go in a make a raid or anything! Any help would be welcome!

Is the ROM chip removable?
It would be a good idea to see if it's readable in a progammer...

Also, there are such adapters for non-x86 machines, without x86 BIOS.

And you're aware that AHA-2944 is HVD, incompatible with SE and LVD devices, right?

Nope its non-socketed and I have tried it in a few different x86 boards with no luck I can see the drives in windows but not the option rom screen.

UW/OF is Open Firmware version, rare and interesting for Sun collectors.
Just give/sell for Sun people and buy controller with x86 firmware.

It could be that the BIOS is disabled, have you checked what SCSI Select reports?

On most older Adaptecs: "There are two ways to invoke SCSISelect: Press Ctrl-A when prompted at boot time. At the DOS prompt type debug and press Enter.
Then at the Debug prompt, type g=xxxx:6 where xxxx = first 4 digits of host adapter BIOS address in hex. (D8000h is the default address."
Not sure if that works on 294x models, and iirc you have to have BIOS shadowing disabled in motherboard BIOS.
There is a Adaptec util called SCSICNTL.exe that may allow changing the settings but it may only work with 15xx adapters....
From the user manual there is no CTRL-A for the UW/OF versions.......

Oh, and no, the 2944UW does not do hardware raid. Though, You could always do a software raid on it

If it were me I would try NSSI and try to save the adapter BIOS then hexedit it to see which BIOS is on it.
If the Header is Adaptec AHA-2944UW Differential BIOS Copyright Adaptec, Inc. then flashing with the newest may work, it says something else then the flasher most likely will not allow it to update....
