Is that possible to make it work with this motherboard? As for now I have P3 500MHz in slot 1 (Slot-242) and I have P3 800/256/133 1.7V with slot 1 adapter.

Based on the manual, you're limited to 100MHz FSB, so even if you got the 800EB to run, you'd be at 600MHz. I don't see anything in the manual about setting CPU voltage and I don't see any jumpers on board to configure. My bet is it won't even post with the 800EB.
But if you want to try, go for it. There are two BIOS imagines available for that board on ultimateretro.net if you feel like experimenting.

You are trying to run something way out of spec. That means you are experimenting (and it also means it probably won't work). If you're worried about bricking it, don't experiment.
Before you even both messing with the BIOS, you could always just put the CPU in and see if it posts.
With respect to the BIOS, you might already be running the newest BIOS. It should show you during the POST. The versions available on Ultimate Retro (which are not definitive, BTW) are

That board has a socketed DIP-32 EEPROM. If the BIOS flash goes wrong, just pop it off and flash it somewhere else. An EEPROM programmer (eg TL866) is best, but you can hot-flash on another motherboard if needs be.
Which P3-500 do you have on the board? If it's Coppermine, you should be good already. As for the P3-800EB: it has a fixed 6x multiplier and is rated for 133MHz FSB. If you run it at 100MHz FSB, its core will run at 600MHz. That's not much of an upgrade. If it works, I'd recommend looking for a P3-800E (100MHz FSB version with 8x multiplier) instead.
Finally, what slocket (slot 1 adapter) are you using? You will probably need one with voltage jumpers, as the CPU will by default ask for 1.7V, and the VRMs are designed to not deliver anything if they can't supply the specified voltage. So to get it to boot, you'll need to be able to jumper 1.8V.
My darn adapter has only one jumper which I have no idea what it does.

Almost certainly 66MHz/100MHz.
In that case, this adapter is almost certainly unsuitable to run a Coppermine CPU on a board with a VRM that isn't explicityly Coppermine-capable.
Which one is better?
These are both designed to run Mendocino Celerons and do not work with Coppermine cpu's unless modified.
So what am I looking for?

Google the brand, model ID and revision of the slockets you find. Check for FC-PGA and/or Coppermine support.
Concrete example: I just looked on a popular auction site for overpriced stuff for "slocket". Top two hits:

In this case no need to google, both have (documented) voltage jumpers. Both also cost MUCH more than I would pay for such a device.

The 370SP 2.0 photos that I have come across are all from around week 40 of 1999 and as far as I have seen these are all Mendocino dedicated. If they were able to run Coppermines out of the box they would not need this mod:
Slotkets have become expensive enough attract scam artists, or so it seems.

If you want to spend an amount of money for which you can buy a socket 370 Coppermine motherboard on a slotket than this is the way to go.
