So here's something I've never seen before. An 11-pin onboard header for a joystick/gamepad. This is on a socket 478 board with RealTek ALC650 audio; Sis963 chipset.

So what exactly kind of joystick/gamepad would connect to such a header?

So ultimately to a 15-pin gameport? Where would one find such a 12-pin ribbon cable to 15-pin gameport adapter? Is there such a thing, or is it probably a proprietary connector for that particular motherbaord?

I think it is a common 15-pin joystick port.
Only assumption here.
Joystick port usually have two ground and three +5V lines. In your 11-pin connector pinout there is no ground and only one +5V. It should work without ground, but it can be suitable for a gamepad to work properly, so you need the gameport on a bracket which connect ground through the chassis.
And 15-4 = 11
I think RXD and TXD are MIDI IN and MIDI OUT pins (they are optional for a gameport, only used in soundcard). The 8 GPx are buttons and axis for joystick 1 & joystick 2.
