I'm wanting buy a front panel for fan control. Some allow up to 30w per channel, some only 20w.

I can't believe cooling fans take even 20w, but can anyone advise? I somehow doubt it will be stamped on the fans I have.

Actually it is marked on the fans, albeit indirectly. (Assuming the labels haven't been peeled off.) Take the amperage and multiply it by the voltage, and you've got wattage.

20W would be 1.67 A
30W would be 2.5 A

These would be INCREDIBLY loud and powerful fans. Even server grade 120mm fan don't crack 1.3 A

It is a mistake to think you can solve any major problems just with potatoes.

Some of the fans they use in Dell Optiplexes are 2 or 2.5A. They're loud as hell when they ramp up to full speed, but also move a fair bit of air quietly at lower speeds. Of course they also draw less power at lower speeds, but when using such a fan with a speed controller, you'd still want to go by the maximum power rating just to be safe.

IMO, Sanyo Denki fans are the best
I haven't have one fail on me yet.... I still have ones working perfectly after buying them 10 years ago, run 24/7... they're far from quiet compared to today's fans, but I'm sure they now make quiet fluid bearing ones... in any case, they're industrial grade and used by many OEMs

Power usages,
Noise decibels,
Airflow volumes,
Cooling capability,
etc..., etc....

X-bitlabs have been doing the larger ones (120mm~140mm) over the years:
