How difficult do you think it would be to convert an ATX case to an AT case? Or just keep hunting for an AT case.

From my experience if you can drill holes that line up, the 7 slot AT boards will work in an ATX case with all the card slots lining up. At least if you have a case with out the raised bumps for standard ATX layout and instead have just holes drilled into the plate that you screw the motherboard directly into. The 8 slot ones are just like bjt stated.
Main pc: Asus ROG 17. R9 5900HX, RTX 3070m, 16gb ddr4 3200, 1tb NVME.
Retro PC: Soyo P4S Dragon, 3gb ddr 266, 120gb Maxtor, Geforce Fx 5950 Ultra, SB Live! 5.1
Have a look at what I did last time with my ATX case. But that case had holes for mounting the AT motherboard.
I know the ASUS/Elan Vital T-10AB case supports both.
An Aopen KF45 has holes for both too, and it's beige.
Life? Don't talk to me about life.
