I knew it as Crazy Cars III, I didn't know there was Lamborghini American Challenge that was similar. Looks like CC3 came out first by a few years though.

I'd like to say Eskimo Games (not because I like saying the derogatory term "Eskimo" in place of the correct indigenous peoples name "Iñupiat") based on the "blanket toss" event, but I'm not super sure that's the right answer.

Haha, it was pure chance that i guessed it! It just so happened that i follow a tech channel that also has a gameplay channel and they played this game in it! The mites looked so familiar that i just had to jump to his channel to confirm what games it was!
