Looking to add a few titles to my (paper) retro book library. Which would you say are the definitive era-specific books from the era (thinking mid to late 1980s)? I would imagine most of them aren't in print anymore, but I wouldn't mind finding some old copies on ebay.

Also, what other programming/game programming books were popular?

Jeff Duntemann: Assembly Language Step by Step is pretty food. Not sure of the publication date of the first edition, but the second edition came out in 92 and is the last to support DOS. It usually available on eBay. Other than that, I learned by mostly reading processor datasheets.

I learned assembly language with Mastering Turbo Assembler by Tom Swam (1st edition). The 2nd edition is still available on Amazon:

This was a very popular book among European programmers PC Intern: System Programming : The Encyclopedia of DOS Programming Know How

It covers a wide range of topics. You'd delve into this after you have a bit of a grasp on assembler.
