Is the DAC on the Roland SCB-55 GM/GS daughterboard called the NEC 63200, and if so, is it like the one on the Roland SCB-7 DB, in as much as it's the same, ie it's 16-bit, 2 channel? Thanks a lot for any info.

The DAC on the SCB-7 is a NEC D6376, which is also a 16-bit 2-channel DA converter.

Edit: And yes, the DAC on an SCB-55 is the NEC D63200 indeed, but is 18-bit.

µPD63200 is an 18bit R2R type DAC while µPD6376 is 16bit.

Its a form of resistor network, the name comes from the ratio of the resistors I believe, with each "rung" having a R:2R radio.
