So I had an idea, I just happen to have a dead Dell 7800GTX, it has a rear memory heatspreader as well and a 7900GTX style cooler.

Could I transplant this cooler onto my Quadro FX3000? The quadro cooler is very loud at full load, and of course the 7900GTX style cooler has more capacity, newer tech and much quiter.

I've done the same thing to a 9800 GT, there will be an alignment issue but it won't stop you from mounting the cooler just be warned though the memory runs pretty hot and this might not be enough.

Is there something holding you back from pulling the videocards cooling fan and just putting in 120mm fan blowing on the heatsink?

I'd done this to both my Quadro FX 3000 and 9800XT. The FX3000 is no where near as hot running as the 9800XT.
