I'm trying to think of a good pairing for my 8500LE. My p4 3.4 runs an x800xt, my XP 2800 runs an FX 5200 ultra while my Athlon 700 runs a GeForce 2 GTS. Should I build something in the middle or replace the fx5200

I don't understand this kind of questions honestly. Isn't it normal that first you have to think what you want to do with the PC and then you see what kind of hardware is good for doing what you want? Like it usually isn't too hard to switch a video card and simply test if the other card is better for whatever you want to do with the pc...

Perhaps I am mistaken but this is the way I usually do things...
if you feel like there is something you want to do with but can't with the PCs you currently have then you should build something new in the middle.

I vote replace FX5200 Ultra.

Check out DOSBox Distro:

a lightweight Linux distro (tinycore) which boots off a usb flash drive and goes straight to DOSBox.

Make your dos retrogaming experience portable!

I agree. I use mine on an AXP Win98SE rig with a PowerVR board on the side.
