640k is the limit for base mem
Unless you're using qemm. I haven't tried qemm in DOSBox but should work in virtualbox or qemu, which there's mac versions for of course. Qemm had an option to up conventional memory to 736k or so, reclaiming various video bios areas. That means you can't use certain video modes, but if your program didn't use them and needed the memory, this option is for you.
Continuous basemem is 640k (639+x usually for special bios stuff)
and even if the bios stuff is not there/moved you can only use 0xa000
when not in graphics mode,
Besides that dosbox has 128k of umb mem (ems=false) attributing for
the non-continuous additional memory.
