As we know, most dos games (all dos games) run natively in 8088, x86... yet today when playing these same games through dosbox, or through GOG, the sys reqs are 1 Ghz or more...

Take Willy Beamish... on GOG they have a system requirement if 1.8 Ghz...

Im just curious as to why that is?

Because DOSBox is an emulator so it adds overhead, they are also taking the base OS requirements into account and GOG isn't going to test the games in DOSBox on ancient processors.

With most (if not all) of the games you can extract the files (sometimes this involves burning a CD) and run it on original hardware.
But GOG does not officially support this, meaning that they won't help you if something doesn't work.
