I have DosBox working to the point of loading the startup page of a legacy program. It has several menu items, but when I select one of those, a new module needs to be launched, but that causes Dos Box to crash. How can I keep an DOS environment open for various actions?

Use VirtualBox or VMWare. If you feel lucky, you may make DOSBox to boot a real DOS from a disk image... but keep in mind that DOSBox is not meant to run applications so you won't get much help.
