Nothing official was ever realised but people have created soundtracks from the game.

Why do you need the audio CD, if you have the game you can extract it from there. Or if you don't have it, look at the Internet Archive.

1 & 2 don't have any CD audio tracks, they have digital music. I don't have a copy of NFS3 on hand right now, but I think none of them used Red Book audio.

No official soundtracks have been released.

What you can do is what others suggested - extract the tracks yourself. I did that in the past using a tool called Game Audio Player. It can also convert the audio files to WAV - you can easily use those to make your own audio CDs.
