Anyone know if/how to get these old SW games to run on a 7 64Bit system?

a virtual machine maybe though it depends if they need 3d acceleration.
if they are non-accelerated windows games,try the xp mode vm. you can download from microsoft. otherwise there is virtualbox and vmware.
if the 93 one is dos, try dosbox of course 😉.
pretty sure Ive ran racer and Rogue Squadron under win7
Rogue Squadron runs better with a glide wrapper (no double croshair problem)
you may need to install them under xp and copy the folders to your win 7 pc

Shadows won't have the atmospheric fog unless you use a 3d card with fog table support. I think Geforce 7 was the last with that. ATI never really supported it properly. It's a D3D game that is basically designed for 3dfx cards.
SW Chess is 2D and 16bit (Win3.x). That might work with XP. You could try VirtualBox with XP installed in it. DOSBOX can run Win3.x with varying degrees of stability and there are guides here.
Never played the Sabacc game.
The last 3 require 3d acceleration and they are painful to run even on XP 32 bits.
Several of them have console ports (namely the N64), so I suppose if you really wanted to you could emulate them instead – but of course that would bring its own problems.
If you have a mac use wineskin I have the last 4 games you listed running great
