That doesn't surprise me and I wouldn't use GOG.com versions as reference. They hack / mod / patch these games to death so that they run on modern machines. You really need to get the original version 2nd hand.
I got another voodoo 2 and there is no artifacts with it. So I think my voodoo was broken.

I had a few V2 Cards with defective RAM 😒 replacing it brings them often back to life.
Also had a V2 with 8Mb, who has one defective IC causing artifacts in textures..
