Go look up the game manual. If you own the original game that shouldn't be too hard.
All Lucasarts games use a similar process to load and save games.

While I don't remember how exactly to save a SCUMM game (I don't play SCUMM game too much, and the last time I played one was somewhere around 1998), there's actually no difference at all between saving in DOSBox and saving in real DOS --it's the game, not DOSBox.
Maybe you should ask pepoluan --he's a big SCUMM fan!

I don't know about Mac's but if you have a PC with Windows you can configure your computer to be able to do a "suspension". That will freeze your computer at the state in which it is, saving it on the hard disk.
Configure Windows XP power management
