A lot of the suggestions here are written for and sound better on other hardware (MT32 or Sound Canvas). Tyrian is written for FM Synth first and foremost, and sounds GREAT.

Not a DOS game but a PC-98 one, but the soundtrack of YU-NO by Ryu Umemoto (with contributions from Ryu Takami and Kazuhiro Kanae) has not only great FM instrument synthesis but is also one of the very best videogame soundtracks I've ever heard, period.

The full soundtrack lasts about 5 hours. I haven't listened much of them yet but Umemoto's other soundtracks such as Eve: Burst Error and Xenon sound promising from the few tracks I've heard.

Some great OPL ones are Princess Maker 2 (mentioned already though) Warcraft, and Wolf.

Personally, I absolutely love the sound tracks from Sky Roads https://www.youtube.com/watch?v=LPYMwtjTC0c. So much so that I actually put quite a few on an MP3 player. Ive also liked the Lotus III music, especially main theme https://www.youtube.com/watch?v=rd4K-3KyEQc.

Gotta love Frank Klepacki, man. He's probably my favorite video game composer.

It's funny how both Dune and Dune II are often listed as top examples of games with quality FM music, even though they are completely different games, with different music and different composers. And indeed, the FM music in both of those games is top notch and wonderfully atmospheric.

Others here have rightfully mentioned Monkey Island 2. Although all of the music in that game was brilliant, especially with the dynamic transitions delivered by the iMUSE system that LucasArts employed in its games in the early '90s, the warm and cheerful tune during the opening campfire scene on Scabb Island has a particularly special place in my heart. 😊

Speaking of LucasArts adventures with iMUSE and good FM sound tracks: Indiana Jones and the Fate of Atlantis definitely deserves a shoutout here as well.
