Maybe try MIDI Yoke and Midi Player with a soundfont or VSTi. Use MIDI Yoke as a MIDI bridge from the game into Midi Player which is your soundfont or VSTi host.

OK to start you off..

So your 1st option is to use what you already have the SB128
Here is how to check/change sound fonts

You can find different soundfonts(ECW) files here,
Ensoniq AudioPCI 2,4,8 MB ecw waveset

A Roland SC55 will sound much like this

Couldnt find any recording for AOE and a Yamaha YMFxx but AOE2 is close enough

Really just try and find recordings in Youtube of various soundcards playing midi files. and work out which you prefer as it really is down to personal taste. Its bit harder as must recording/comparisons are of late dos games like Doom, Duke3d, much more fast paced then AOE's more classical style, maybe Warcraft 1 or 2 will give you a clue?
But once you have an idea of how each card sounds we can focus on how to get it going
