Hi guys!
Recently I decided to start a Pentium III build. I have Slot 1 Pentium III 1GHz / 100 System Bus and it seems that finding motherboard for this CPU is not so easy.

Can you help me?
My current types are:
Gigabyte GA-BX2000

but it will work? I've foud different answers...

In the nearest future I will have:
GIGABYTE GA-6BXC
AOPEN AX 63 PRO
EPOX EP-BX3

But I don't know if any of tchem will work.

What would be "creme de la creme" Motherboard for this CPU?

Imo that will work with all your boards. Some early i440BX boards will not support this CPU, but the later ones shouldn't have issues with that. If you're not sure, just test and see if it works, it shouldn't hurt anything (in the worst case, that'll overvolt the 1.7V core to 2.0V ... that's not a big deal, especially when used for a really short time). I know for a fact that my rev 1.01 Abit BH6 from early 1999 supported my 1GHz FSB100 Pentium 3 without real issues (the slotcket adapter was flaky though : the connector is a bit dirty unfortunately)
