All of those games are nowhere in the same league as Fallout 1 as far as processor requirements. Bump up your cycles using CTRL+F12 while monitoring CPU usage. You'll probably need to at the extreme least be at 30,000 cycles and probably somewhere in the range of 50,000 cycles. I don't play Fallout …

Just don't use a cycles value that low for that game. Also monitor your procesor usage in Resource Monitor and/or Task Manager.

You could see if FREEDOS has sort.exe or copy sort.exe from MS-DOS. Don't mount Windows directories in DOSBox, almost none of the files in Windows are MS-DOS programs anyway.
