I use a GF4 Ti4400 with my K6-2 500Mhz system. Vast overkill, I know, but it's stable & the performance seems OK. I get 27.3 fps in Quake 3 @ 1024x768 with the settings all on high. Very unusual card! The ESS ES488 is fairly uncommon. I don't think I've ever seen an ISA sound card with stereo rca outputs, 3.5" jacks and no game port. As jmarsh said, try using it as a standard soundblaster compatible... Not Pro or 16.

What are you intending to play on this system? A K6-2 will be quite underpowered for any games made after 1999 or so.
