Simpsons hit and Run has wonky physics on modern processors too, and crashes a bunch. At least without the community patches. You can set the thread affinity in task manager, but it is a lot easier to just disable all but one core instead.

Pick whichever one gives you the most nostalgia tickles. It doesn't really matter. If you cared about performance, you would use faster parts than either CPU. You said you are recreating a machine you once owned. Did it have a P3 or a K6-2?

You can patch win9x to work with hard drives up to 2TB, but it isn't really worth it IMO. 128gb is an absolutely massive amount of space.

Replicating a 3D GPU is orders of magnitude harder then cloning an 80's audio chip. I would think in 30 years you might be able to build a hardware replica of 90's era system (CPU, GPU, and sound) on a single programmable chip but it probably won't be cheap. Not sure if the future is in hardware …
