well I am not recommending the ECE version in my post. You won't have fluidsynth problems in the linked build as it isn't part of DOSBox.

Daum is quite unstable and by using it, you are on your own. Try using a non modified build from: http://www.emucr.com/search/label/DOSBox

I am sure this question has been answered before. DOSBox has written DOSBox at several location in the emulation memory (like the bios name for example) (which you can find in the ROM at the right location)

There has been code added to the main line that happens to incorporate a deadzone as well. Different from the patch you are referring to (as it adds more joystick features)

the text mode screen is 640x400 (the one you startup in) maybe select a different text mode to startup in.. not sure what the others have for resolution though)

you can start dosbox with a different configuration file through the -conf switch. alternatively you can run a batch file inside dosbox that reprograms the numbers for cycles, cycleup,cycle down using config -set
