GeForce 7 (and G80 for that matter) has VDP1. It really can only decode MPEG 1/2. It has limited AVC / VC-1 support. It can't accelerate Flash decode. I'm not sure if Furmark will peak a NV3x chip. It might be too bottlenecked by the shader ALUs. I'd try Doom3 in a window. Run High detail and make sure vsync is off. The engine has a 60 fps limit so make sure the scene is complex enough to keep it below 60fps for max GPU usage.

The most interesting nForce2 MCPs are the one with the NVAPU (MCP-T) and the one with Gigabit ethernet (MCP-Gb). Chipset RAID is best avoided. Having SATA though is nice because the MCP's SATA isn't using PCI bandwidth AFAIK. The boards using third party SATA controllers have them on PCI.

Alchemy is a DirectSound to OpenAL wrapper. OpenAL-native games like Killing Floor don't need it. Lots of Unreal Engine 2 games used OpenAL.
