Final Fantasy VII, Wipeout XL and Mortal Kombat 4 will run well on that system. The first two are D3D games but work just fine on a Voodoo1. I have a similar rig and have posted some of my benchmarks and impressions here in case you're curious.

You can also use jumper cables such as these to hook up the connector to the pins on the motherboard, one by one. This is assuming you know the pinout for the motherboard and for the connector on the bracket as well. The latter can easily be determined using a multimeter via continuity testing.
