Alt+Enter toggles fullscreen, Alt+Tab will switch to other windows just like with any other Windows app. The DOSBox readme will answer most questions you might have.

So you've got the game files on your hard drive in that wolf3d folder. This means you don't need to mess with installers. You should be able to just copy the wolf3d folder somewhere, mount it in DOSBox and then run wolf3d.exe inside of DOSBox.

I don't think I've had a problem using ImgBurn and MagicDisc (both 100% free), but I haven't messed much with Windows games that use CD Audio tracks. Redbook audio in games is the devil, and I'm glad it was a short-lived concept.
