Is there a way to run a dos game using DosBox in Black and White colors?

I don't think so but maybe you could achieve that desired effect running a CVS version capable of running using D3D and applying some grayscale effect from your video card control panel.

ok it worked:

Just change machine type (in dosbox.conf) to:

machine=hercules

but the screen is wide and the movement are longer ...

Yes. That's another way, but keep in mind that most games won't support Hercules at all.
