Will they do the low resolutions DOS like DOOM for example scaled to fit the bezel without any bars or border?

Short answer: yes.
Slightly-longer answer: the 2007FP made some small sacrifices to retro compatibility in the name of modern features. See here and here for more info. It's still totally fine for standard mode 13h & VESA stuff, but if you want (IMHO) the gold standard for retro compatibility, go for a 2001FP if you can find one, but make sure it has low hours on it as they're getting pretty old.
