Once you are in the realm of using an ATX-to-AT converter on the power supply, another option is to replace the momentary power switch in an ATX case with a latching one. I've found the E-Switch TL2285EE to fit many cases. You would have to solder wires between the correct pins, and the wires on the converter intended to interface with the original (AT) power switch.

Holy shit thanks for posting this. I went through hours of searching for a part number for a suitable replacement and ultimately failed. (The project only was completed since Eep386 sent me a used switch harvested from an old case)
