Hi on my new P4 board I have an option to change the CPU host frequency.

What is it exactly? the standard value is auto and line lower is "actual frequency" with 100MHz but greyed out. if I lower this value, can I also slow down the CPU for some older games? But its not the FSB or is it?

I have a P4 2.0

Yes it is likely for FSB and you probably could slow the bus down to 66Mhz.
What exact make / model motherboard is it ??

You can only go lower? usually you would want to go up for OC 😀
P4 FSB is quad pumped, so 100MHz = effective 400MT/s https://en.wikipedia.org/wiki/Quad_data_rate
yes, lowering this will slow down CPU
